INSTANT POT CHIPOTLE CHICKEN SALAD

Ingredients

• 3 large chicken breasts
• 1 can of fire roasted tomatoes
• 1 tbsp garlic, minced
• 1 sweet onion
• 2 chipotle chile peppers
• 1 tbsp cumin
• 2 tsp oregano
• 1 tsp. garlic powder
• 1 tbsp. chipotle seasoning (I love Flavor God)
• 1 tbsp. salt (more or less to taste)
• Optional: 2 packets of stevia (love sweet and spicy!)
• 1/4 cup water
• greens of choice (I use blend of romaine and cabbage)
• cojita cheese
• avocado
• cilantro
• tortilla strips
• 2 chipotle chile peppers

Instructions

1. Add all ingredients except chicken into a blender. Blend until smooth.
2. In your instant pot, add chicken and sauce. Cook on high pressure for 10 minutes.
3. Shred chicken and serve over lettuce and top with cojita cheese, avocado, cilantro and tortilla strips.
