21 Day Fix Hasselback Chicken

Think we have all seen some really yummy Hasselback Chicken recipes and videos floating around Facebook and Pinterest. I wanted to put a spin on it and make it 21 Day Fix approved and get the container count down! If you follow me on social media, you know I am all about simplicity. Hasselback chicken has always scared me because it looks like it requires a lot of time and work. I am happy to report that this chicken is SO simple to make!

INGREDIENTS

  • 2 large chicken breasts
  • 1 tsp olive oil
  • 2 cups spinach
  • 3/4 cups ricotta cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp sea salt
  • 1 tsp paprika
  • 1/2 cup shredded white cheddar cheese

DIRECTIONS

  1. Preheat the oven to 375 degrees.
  2. Use a sharp knife and make slits in the chicken, making sure to not cut all the way through the chicken. Make slits about 3/4 of an inch apart. You should have about 7-8 slits per piece of chicken, may vary depending on the size of your chicken breasts.
  3. Heat a frying pan on the stove over medium heat, adding in one tsp of olive oil and spinach.
  4. Once spinach is wilted, add in ricotta cheese, garlic powder, onion powder and sea salt.  Cook until mixture is melted, about 2 minutes and stir often.
  5. Remove spinach mixture from the stove and use it to stuff the slits of the chicken evenly.
  6. Sprinkle chicken with paprika - I also sprinkled on a little more garlic powder, onion powder and sea salt for added flavor!
  7. Cover each chicken breast with 1/4 cup of shredded white cheddar cheese.
  8. Place the chicken breasts in a 9x9 pan. I lightly coated my Pyrex with non-stick cooking spray.
  9. Place chicken in the oven and cook for 23-25 minutes, or until chicken is no longer pink.
  10. Enjoy!

My chicken breasts were large enough that ONE chicken breast equaled TWO servings. So, half of a chicken breast counted as 1 red, 1/2 green, 1/2 blue. 

**If you wanted to use smaller chicken breasts, you could leave the recipe the same and count 1 chicken breast as 1.5 red, 1 green and 1 blue.**

This was a great dinner and I loved that one chicken breast was enough to feed both my husband and I for dinner. What I loved even more? The chicken is SO good (almost better in my opinion) the next day as leftovers! You could easily prep the chicken in advance and cook when you are ready to eat it, or even cook ahead of time!
